Yes you can omit “de” in that phrase.
These are connective words “por, para, de” most f the time are translated to “by, for, from”.

I hear “disfruta de las vacaciones” with an added “de”. De is a slippery word like por, para, hacer. If it is correct to both use and to omit de, when would you choose one or the other?

I so love the verb disfrutir!
